Ingredients

  • 1 cup 100 g powdered milk
  • ⅓ cup 35 g unsweetened cocoa powder
  • ½ cup 120 ml hot brewed black coffee
  • 1 cup 150 g chocolate sprinkles or sugar-free chocolate sprinkles, for coating
  • A little oil for greasing your hands

Instructions

  • Mix the dry ingredients: Add the powdered milk and unsweetened cocoa powder to a large bowl. Whisk thoroughly until evenly combined and free of lumps.
  • Add the hot coffee: Slowly pour the hot brewed coffee into the dry ingredients while whisking continuously. Mix until a thick, smooth, glossy chocolate paste forms.
  • Chill the mixture: Cover the bowl with plastic wrap, pressing it gently against the surface. Refrigerate for approximately 30 minutes, or until firm enough to roll. Chill longer if the mixture remains sticky.
  • Roll into balls: Lightly grease your hands with oil. Scoop small portions of the chilled mixture and roll them between your palms to form bite-sized balls.
  • Coat with chocolate sprinkles: Place the chocolate sprinkles in a shallow bowl. Roll each brigadeiro in the sprinkles until completely coated.
  • Serve and enjoy: Arrange the brigadeiros on a serving plate. Serve immediately or refrigerate until ready to enjoy.

Notes

  • Add the coffee gradually to prevent the mixture from becoming too thin.
  • Whisk thoroughly to achieve a smooth, lump-free consistency.
  • If the mixture is too sticky, refrigerate it for another 15–30 minutes.
  • Lightly oil your hands to make rolling easier.
  • Use high-quality cocoa powder for a deeper chocolate flavor.
  • Substitute hot water or warm milk for coffee if desired; the flavor and texture may vary.
  • Customize the coating with shredded coconut, chopped nuts, or dark chocolate sprinkles.
  • For a sugar-free variation, choose suitable sugar-free sprinkles and check the ingredients of all products used.
  • Store in an airtight container in the refrigerator for 4–5 days.
  • Freeze in a freezer-safe container for up to 2 months and thaw in the refrigerator before serving.
  • Traditional Brazilian brigadeiros typically contain condensed milk and butter. This recipe is a simplified, no-bake variation made with powdered milk and coffee.
