- 12 oz pasta penne, rigatoni, or fusilli
- 2 cups cherry or grape tomatoes
- 1 5.2 oz wheel Boursin cheese (Garlic & Herb)
- Salt for pasta water
Preheat oven to 400°F (205°C).
Bring a large pot of generously salted water to a boil.
Place cherry tomatoes and the whole wheel of Boursin cheese in a baking dish.
Bake uncovered for 20–25 minutes, until tomatoes burst and cheese is soft.
While baking, cook pasta until al dente. Reserve ½ cup pasta water, then drain.
Remove baking dish from oven and stir tomatoes and Boursin together until creamy.
Add cooked pasta and toss to coat.
Add reserved pasta water a little at a time until sauce reaches desired consistency.
Rest 1–2 minutes before serving.
