Ingredients
  

  • 12 oz pasta penne, rigatoni, or fusilli
  • 2 cups cherry or grape tomatoes
  • 1 5.2 oz wheel Boursin cheese (Garlic & Herb)
  • Salt for pasta water

Instructions
 

  • Preheat oven to 400°F (205°C).
  • Bring a large pot of generously salted water to a boil.
  • Place cherry tomatoes and the whole wheel of Boursin cheese in a baking dish.
  • Bake uncovered for 20–25 minutes, until tomatoes burst and cheese is soft.
  • While baking, cook pasta until al dente. Reserve ½ cup pasta water, then drain.
  • Remove baking dish from oven and stir tomatoes and Boursin together until creamy.
  • Add cooked pasta and toss to coat.
  • Add reserved pasta water a little at a time until sauce reaches desired consistency.
  • Rest 1–2 minutes before serving.

  • Pasta water is key for a silky, cohesive sauce.
  • Use ripe, flavorful tomatoes—this recipe relies on them.
  • Sauce thickens as it sits, so loosen gently when reheating.
