- 1 cup small-curd cottage cheese
- 2 large eggs
- 1 cup diced apples peeled optional, cut small
- ¾ cup oat flour or blended rolled oats
- 2 tablespoons maple syrup or honey
- 1 teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- ½ teaspoon baking powder
- Pinch of salt
- ¼ teaspoon nutmeg optional
Preheat oven to 375°F (190°C). Grease a mini muffin tin or line with silicone liners.
If using rolled oats, blend into a fine flour. Dice apples into small, even pieces.
In a bowl, whisk together cottage cheese, eggs, maple syrup, and vanilla until mostly smooth.
Stir in oat flour, baking powder, cinnamon, nutmeg (if using), and salt.
Gently fold in diced apples.
Spoon batter into muffin tin, filling each cup about ¾ full.
Bake for 18–22 minutes, until tops are set and lightly golden.
Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
