Cinnamon apple cottage cheese bites are soft, protein-packed breakfast or snack bites made with cottage cheese, diced apples, oats, and warm cinnamon spice. Naturally sweet and meal-prep friendly, these healthy bites taste like mini apple pie muffins while keeping you full and energized.

Ingredients
  

  • 1 cup small-curd cottage cheese
  • 2 large eggs
  • 1 cup diced apples peeled optional, cut small
  • ¾ cup oat flour or blended rolled oats
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder
  • Pinch of salt
  • ¼ teaspoon nutmeg optional

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a mini muffin tin or line with silicone liners.
  • If using rolled oats, blend into a fine flour. Dice apples into small, even pieces.
  • In a bowl, whisk together cottage cheese, eggs, maple syrup, and vanilla until mostly smooth.
  • Stir in oat flour, baking powder, cinnamon, nutmeg (if using), and salt.
  • Gently fold in diced apples.
  • Spoon batter into muffin tin, filling each cup about ¾ full.
  • Bake for 18–22 minutes, until tops are set and lightly golden.
  • Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Small apple pieces bake more evenly and prevent soggy centers.
  • These firm up as they cool—don’t overbake.
  • Silicone liners work best to prevent sticking.
  • Delicious warm or cold.
