Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon poppy seeds

  • Wet ingredients:
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1 cup yogurt or sour cream
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • Optional glaze:
  • 1 cup powdered sugar
  • 2 –3 tablespoons lemon juice

Instructions
 

  • Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a bowl, whisk together flour, poppy seeds, baking powder, baking soda, and salt.
  • In another bowl, mix sugar, eggs, oil, yogurt, lemon zest, lemon juice, and vanilla extract until smooth.
  • Gradually combine dry ingredients with wet ingredients, mixing until just combined.
  • Spoon batter into muffin liners, filling each about 3/4 full.
  • Bake for 18–22 minutes, until a toothpick inserted comes out clean.
  • Let muffins cool slightly, then drizzle with lemon glaze if desired.
