Ingredients
  

For the Apple Filling

  • 4 cups peeled and sliced apples (about 4-5 medium apples) A mix of sweet and tart apples like Granny Smith and Honeycrisp is recommended.
  • 1 cup brown sugar
  • 2 teaspoons cinnamon
  • 1 tablespoon lemon juice

For Assembling

  • 4 large flour tortillas
  • 1/2 cup caramel sauce For drizzling on top.
  • 1 tablespoon butter Melted, for drizzling over enchiladas.

Optional Serving

  • 1 scoop vanilla ice cream Optional, for serving.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the sliced apples, brown sugar, cinnamon, and lemon juice. Toss to coat the apples well and let sit for a few minutes.

Assembly

  • Take a tortilla and place a scoop of the apple filling in the center. Roll it tightly, tucking in the sides, and place seam-side down in a greased baking dish.
  • Repeat until all tortillas and filling are used.

Baking

  • Melt the butter and drizzle it over the assembled enchiladas. Pour any remaining filling on top, then cover with aluminum foil.
  • Bake in the preheated oven for about 25 minutes. Remove the foil and bake an additional 10-15 minutes.

Serving

  • Once baked, drizzle with caramel sauce and serve warm, optionally with a scoop of vanilla ice cream.

Notes

To make ahead, assemble the enchiladas a day in advance and refrigerate. If there's leftover apple filling, consider making an apple crisp.
