  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced chicken, season with salt, pepper, and chili powder, and cook until golden brown, about 5–7 minutes.
  • Once the chicken is cooked, toss in the diced sweet potatoes, onion, and bell pepper. Stir for a few minutes until they start to soften.
  • Mix in the corn and pour the BBQ sauce over everything. Stir to combine well.
  • Reduce the heat to low, cover the skillet, and let it cook for about 15–20 minutes, or until the sweet potatoes are tender.
  • Remove from heat and garnish with fresh cilantro, if desired.

Notes

This dish stores well; refrigerate for up to 3 days or freeze in portions for up to a month. Reheat thoroughly when ready to enjoy.
