  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips or more, if you love chocolate!
  • Optional: Reese's Peanut Butter Cups, chopped for that extra crunch

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the creamy peanut butter, granulated sugar, brown sugar, and vanilla extract. Beat in the eggs one at a time until the mixture is smooth and creamy.
  • In a separate bowl, whisk together the baking soda, salt, and a bit of flour if you’re using it. Gradually add this to your wet mixture, stirring until just combined.
  • Fold in the chocolate chips and chopped Reese's Peanut Butter Cups if you’re feeling adventurous.
  • Using a cookie scoop or your hands, form balls of dough and place them on a baking sheet lined with parchment paper, spaced about 2 inches apart.

Baking

  • Bake for about 10-12 minutes or until the edges are lightly golden. The centers may look a little soft; that’s exactly how you want them.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

To enhance your cookie experience, don’t overmix the dough, chill it for at least 30 minutes, and consider adding crushed pretzels for a salty crunch or drizzling melted chocolate on top. Store in an airtight container for up to a week, or freeze for up to three months.
