Ingredients
  

  • For the chicken:
  • lbs boneless chicken breasts or thighs
  • 2 tablespoons olive oil
  • Salt and black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • For the broccoli:
  • 3 cups broccoli florets
  • 1 tablespoon olive oil
  • Salt and black pepper
  • For the creamy garlic sauce:
  • ½ cup mayonnaise or Greek yogurt
  • 2 –3 garlic cloves minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and black pepper
  • For the base:
  • Cooked rice quinoa, or cauliflower rice

Instructions
 

  • Coat the chicken with olive oil, salt, pepper, garlic powder, and paprika.
  • Preheat the grill to medium-high heat and cook the chicken for 5–7 minutes per side until fully cooked. Let rest, then slice.
  • Toss broccoli with olive oil, salt, and pepper, then grill or roast until tender with slight char.
  • In a bowl, mix mayonnaise (or Greek yogurt), garlic, lemon juice, olive oil, salt, and pepper until smooth.
  • Assemble bowls by adding your base, topping with sliced chicken and broccoli, then drizzling with creamy garlic sauce.

Notes

  • Chicken thighs provide more flavor and stay juicier than breasts.
  • Do not overcook broccoli—keep it slightly crisp.
