Preparation

  • Carefully cut the avocados in half and remove the pits. Make sure the avocados are ripe for a smooth texture.
  • Use a spoon to scoop out a bit of avocado flesh from each half to create space for the chicken mixture. Fold the scooped-out avocado into the chicken mixture.
  • Generously spoon the buffalo chicken mixture into each avocado half.
  • Place the stuffed avocados on a bed of mixed greens or romaine lettuce. Drizzle with dairy-free ranch dressing before serving.

Notes

Make the chicken mixture a day in advance to save time. Assemble avocados right before serving for freshness. Consider adding garlic powder, chives, or smoked paprika for extra flavor. Avoid using overly ripe avocados and don't overstuff them.
