  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 8 small tortillas

Preparation

  • In a medium bowl, combine the shredded chicken with the buffalo sauce and shredded cheese, mixing well for even flavor distribution.
  • Heat the tortillas in a microwave for about 20 seconds or until they soften for easier rolling.
  • Take a heaping spoonful of the chicken mixture and place it in the center of a tortilla. Roll tightly, ensuring the filling does not spill out.

Cooking

  • In a large skillet, heat oil over medium heat. Fry the taquitos seam-side down first until golden, then flip to cook all sides, approximately 2-3 minutes per side.
  • Remove taquitos from oil and let them drain on paper towels. Serve hot with blue cheese or ranch dressing for dipping.

Notes

Don't overfill to prevent bursting while frying. For a healthier option, bake taquitos at 400°F (200°C) for about 15-20 minutes until crispy. Experiment with different dipping sauces.
