  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons Cajun seasoning (store-bought or homemade)
  • 2 tablespoons olive oil or butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 medium bell pepper, diced (red or green)
  • 1 small onion, diced
  • 1 cup chicken broth (optional for added flavor)
  • to taste none fresh parsley for garnish

Preparation

  • Rinse the shrimp under cold water and pat them dry with a paper towel.
  • In a bowl, toss the shrimp with Cajun seasoning, making sure all pieces are evenly coated.

Cooking

  • In a large skillet, heat olive oil or butter over medium-high heat. Once hot, add minced garlic and sauté for about 30 seconds.
  • Add diced onion and bell pepper to the skillet. Sauté until they soften, about 3-5 minutes.
  • Push the vegetables to the side of the skillet and add the seasoned shrimp. Cook for about 2-3 minutes on each side until they turn pink and opaque.
  • Squeeze in fresh lemon juice and stir the shrimp and vegetables. If you want a slightly saucier dish, you can add chicken broth at this point.
  • Remove from heat, sprinkle chopped parsley, and serve hot over your choice of base—rice, pasta, or crusty bread.

Notes

Avoid overcooking shrimp to keep them tender. Experiment with homemade Cajun seasoning and feel free to add extra ingredients like okra or corn for added flavor.
