Ingredients
  

  • 2 cups grated carrots about 3–4 medium carrots
  • 2 large eggs
  • ½ cup all-purpose flour
  • ¼ cup grated Parmesan cheese optional
  • 2 tablespoons chopped green onions
  • 1 small garlic clove minced
  • Salt and black pepper to taste
  • ½ teaspoon paprika optional
  • ¼ teaspoon cumin optional
  • 2 –3 tablespoons olive oil for frying

Instructions
 

  • Prep
  • Grate carrots finely and pat dry with paper towels to remove excess moisture.
  • Chop green onions and mince garlic.
  • Heat a large skillet over medium heat.
  • Mix the Batter
  • In a bowl, combine grated carrots and eggs.
  • Stir in flour, Parmesan (if using), garlic, green onions, salt, pepper, and spices.
  • Mix until fully combined.
  • If mixture feels too wet, add 1 tablespoon flour.
  • Cook the Fritters
  • Add olive oil to skillet.
  • Scoop about 2 tablespoons of mixture into the pan.
  • Flatten gently with a spatula.
  • Cook for 3–4 minutes per side, until golden brown and crisp.
  • Transfer to paper towels to drain.
  • Repeat with remaining batter.
  • Serve
  • Serve warm with Greek yogurt, sour cream, or garlic sauce.
  • Garnish with fresh herbs if desired.

Notes

  • Remove excess moisture from carrots for crispier fritters.
  • Do not overcrowd the pan—cook in batches.
  • Keep heat at medium to prevent burning.
  • Store leftovers in refrigerator up to 3 days.
  • Reheat in skillet or oven at 350°F for best texture.
  • Freeze cooked fritters up to 2 months.
