Grate carrots finely and pat dry with paper towels to remove excess moisture.
Chop green onions and mince garlic.
Heat a large skillet over medium heat.
Mix the Batter
In a bowl, combine grated carrots and eggs.
Stir in flour, Parmesan (if using), garlic, green onions, salt, pepper, and spices.
Mix until fully combined.
If mixture feels too wet, add 1 tablespoon flour.
Cook the Fritters
Add olive oil to skillet.
Scoop about 2 tablespoons of mixture into the pan.
Flatten gently with a spatula.
Cook for 3–4 minutes per side, until golden brown and crisp.
Transfer to paper towels to drain.
Repeat with remaining batter.
Serve
Serve warm with Greek yogurt, sour cream, or garlic sauce.
Garnish with fresh herbs if desired.
