  • 2 medium zucchinis Washed and grated
  • 1 cup shredded cheese (mozzarella, cheddar, or a blend) Feel free to mix and match

  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and grate the zucchinis. Squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  • In a large mixing bowl, combine grated zucchini, shredded cheese, flour, egg, garlic powder, Italian seasoning, and a pinch of salt and pepper. Stir until well combined.
  • Line a baking sheet with parchment paper. Spoon the zucchini mixture onto the sheet and shape it into sticks, about 1 inch wide.

Baking

  • Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until golden brown and the cheese is bubbling.
  • Let them cool for a few minutes before cutting into individual sticks. Serve warm with marinara sauce for dipping.

Notes

For best results, ensure to squeeze out as much moisture from the zucchini as possible. Feel free to experiment with different cheese varieties and herbs for enhanced flavor.
