  • 1 cup cooked chicken, diced Leftover chicken works great.
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil Essential for authentic flavor.
  • 2 eggs beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 stalks green onions, chopped
  • Salt and pepper to taste

Preparation

  • Gather all your ingredients, ensuring the rice is cold and separated.

Cooking

  • Heat the sesame oil in a large skillet or wok over medium-high heat.
  • Add the beaten eggs to the pan and scramble until set. Remove from the pan and set aside.
  • In the same pan, add the diced chicken and stir-fry for a couple of minutes until heated through.
  • Add the mixed vegetables and stir-fry for an additional 2-3 minutes until tender but vibrant.
  • Add the cold rice, breaking up any clumps, and stir well with the chicken and veggies.
  • Drizzle soy sauce over the mixture, add scrambled eggs and chopped green onions, and stir until heated through. Season with salt and pepper to taste.
  • Serve hot and enjoy your homemade chicken fried rice!

Notes

For best results, use day-old rice. Cooking on high heat enhances the texture and flavor. Experiment with sauces and proteins.
