Ingredients

Main Ingredients

  • 1 lb beef (thinly sliced, e.g., flank steak or sirloin) Use flank steak or sirloin for best results.
  • 1 large onion (sliced)
  • 2 cloves garlic (minced)
  • 2 tablespoons soy sauce Low-sodium soy sauce can be used.
  • 1 tablespoon oyster sauce Can substitute with hoisin sauce if needed.
  • 1 tablespoon cornstarch (mixed with 2 tablespoons water) This helps to thicken the sauce.
  • 1 teaspoon sugar
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil (for frying)
  • Salt and pepper (to taste)
  • Green onions (sliced, for garnish)

Instructions

Preparation

  • Start by slicing your beef against the grain. Thin slices ensure tenderness. Slice the onion and mince the garlic separately.

Marinade

  • In a bowl, combine the sliced beef with soy sauce, oyster sauce, and cornstarch mixture. Let it marinate for about 10 minutes while you heat up your skillet.

Cooking

  • Over medium-high heat, add the vegetable oil to a large skillet or wok. Once hot, toss in minced garlic, stirring quickly to avoid burning.
  • Add the marinated beef in a single layer. Sear for about 2-3 minutes without stirring to develop a nice crust.
  • Once browned, flip the beef and cook until just done. Remove the beef from the pan and set aside.
  • In the same skillet, add the sliced onion. Stir-fry for 2-3 minutes until they are tender and slightly caramelized.
  • Return the beef to the pan, sprinkle with sugar and sesame oil, and stir everything together. Cook for another minute, ensuring everything is well combined.
  • Season with salt and pepper to taste.

Serving

  • Remove from heat, garnish with sliced green onions, and serve hot over steamed rice or noodles.

Notes

High heat is key for perfect searing. Customize with additional vegetables like bell peppers or broccoli. Avoid overcrowding the pan to maintain frying instead of steaming.
