  • 1 cup pitted dates
  • 1 cup almonds or walnuts Can substitute with cashews or pecans.
  • 1/4 cup cocoa powder
  • 1 zest orange
  • 2 tablespoons orange juice
  • 1/2 teaspoon vanilla extract
  • a pinch salt
  • Shredded coconut or crushed nuts for rolling (optional)

Preparation

  • Start by ensuring your dates are soft enough to blend. If they seem a bit dry, soak them in warm water for about 10 minutes, then drain.

Mixing the Base

  • In a food processor, combine the pitted dates and nuts. Pulse until the mixture resembles coarse crumbs.
  • Incorporate the cocoa powder, orange zest, orange juice, vanilla extract, and a pinch of salt. Blend until everything is well mixed and sticky.

Forming the Balls

  • Use your hands to roll the mixture into small balls, aiming for about 1 inch in diameter. If the mixture is too sticky, dampen your hands slightly.

Finishing Touch

  • If desired, roll the balls in shredded coconut or crushed nuts for added texture.

Chilling

  • Place the energy balls on a baking sheet lined with parchment paper. Let them chill in the fridge for at least 30 minutes to firm up before enjoying.

Notes

These energy balls can last about a week in an airtight container in the fridge or can be frozen for up to three months. Adjust sweetness and experiment with superfoods for a nutritional boost.
