  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup apple cider
  • 1/2 cup unsweetened applesauce Can substitute with grated fresh apples.
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup vegetable oil Can be replaced with applesauce in vegan version.
  • 1 large egg

Optional Add-Ins

  • 1/2 cup chopped walnuts or pecans For a nutty flavor.
  • 1/2 cup diced apples For extra texture.
  • 2 tablespoons oats Sprinkle on top for crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease or line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
  • In another bowl, mix together the apple cider, applesauce, sugars, oil, and egg until smooth.
  • Slowly fold the dry ingredients into the wet ingredients, being careful not to overmix.
  • If desired, fold in the optional add-ins like nuts or diced apples.
  • Fill each muffin cup about two-thirds full.

Baking

  • Place the muffin tin in the oven and bake for 18-22 minutes.
  • Check for doneness with a toothpick; it should come out clean.
  • Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

Store muffins in an airtight container at room temperature for up to 3 days. For longer freshness, refrigerate. Can also be frozen for up to 3 months.
