  • 1/2 cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

  • 1/4 cup brown sugar for topping

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
  • In a bowl, whisk together the pumpkin puree, vegetable oil, and eggs until smooth.
  • In another bowl, sift together all-purpose flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Gradually fold the dry mixture into the wet ingredients until just combined. Be careful not to overmix.
  • Divide the batter evenly among the muffin cups.
  • In a small bowl, mix the brown sugar with a dash of cinnamon and sprinkle over the tops of the muffin batter.
  • Place in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
