  • 4 pieces Boneless, skinless chicken breasts
  • 1 cup Coconut milk The creamier, the better.
  • 1/4 cup Fresh lime juice Freshly squeezed for optimal flavor.
  • 2 cloves Garlic Minced to add depth to the marinade.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.
  • 1 tablespoon Olive oil For cooking and added flavor.
  • 1/4 cup Cilantro For garnish.

Preparation

  • In a bowl, combine coconut milk, lime juice, minced garlic, salt, and pepper. Add the chicken breasts and ensure they’re thoroughly coated. Let them marinate for at least 30 minutes or up to several hours in the refrigerator for optimal flavor.

Cooking

  • Heat a tablespoon of olive oil in a large skillet over medium-high heat.
  • Remove the chicken from the marinade (but save the marinade for later!). Place the chicken in the pan and cook for about 6-7 minutes on each side until golden brown and cooked through. The internal temperature should reach 165°F (75°C).
  • After removing the chicken, add the reserved marinade to the pan. Bring it to a simmer for a few minutes until it thickens slightly.

Serving

  • Slice the chicken and drizzle the sauce over it. Garnish with fresh cilantro for an extra touch of tropical flair.

Notes

Don’t rush the marination for enhanced flavor and tenderness. Use fresh ingredients for the best results. Adjust spice levels by adding red pepper flakes for heat.
