- 2 cups rice uncooked or cooked depending on method
- 2 boneless skinless chicken breasts or thighs
- 1 cup coconut milk
- Juice of 1–2 limes
- 2 cloves garlic minced
- 1 teaspoon ginger
- Salt and pepper to taste
- 1 tablespoon olive oil
- ½ cup chicken broth or water
- Optional: fresh cilantro
Season chicken with salt and pepper.
Heat olive oil in a large pan over medium heat.
Add chicken and cook for 5–7 minutes until lightly browned.
Remove chicken and set aside.
In the same pan, add garlic and ginger and cook for 1 minute.
Add rice (if uncooked) and toast for 1–2 minutes.
Pour in coconut milk and chicken broth.
Return chicken to the pan.
Cover and simmer for 15–20 minutes until rice is tender and liquid is absorbed.
Stir in lime juice.
Garnish with cilantro and serve warm.
