Ingredients
  

  • 2 cups rice uncooked or cooked depending on method
  • 2 boneless skinless chicken breasts or thighs
  • 1 cup coconut milk
  • Juice of 1–2 limes
  • 2 cloves garlic minced
  • 1 teaspoon ginger
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • ½ cup chicken broth or water
  • Optional: fresh cilantro

Instructions
 

  • Season chicken with salt and pepper.
  • Heat olive oil in a large pan over medium heat.
  • Add chicken and cook for 5–7 minutes until lightly browned.
  • Remove chicken and set aside.
  • In the same pan, add garlic and ginger and cook for 1 minute.
  • Add rice (if uncooked) and toast for 1–2 minutes.
  • Pour in coconut milk and chicken broth.
  • Return chicken to the pan.
  • Cover and simmer for 15–20 minutes until rice is tender and liquid is absorbed.
  • Stir in lime juice.
  • Garnish with cilantro and serve warm.

Notes

  • Add lime juice at the end to keep flavor fresh and bright.
  • Adjust liquid depending on rice type used.
  • Avoid overcooking chicken to keep it juicy.
  • Store leftovers in the fridge for up to 3 days.
  • Reheat with a splash of coconut milk or water.
