Preparation

  • In a mixing bowl, combine the cottage cheese, almond flour, egg, baking powder, and seasonings. Stir well until you achieve a smooth consistency.

Cooking

  • Preheat a non-stick skillet over medium heat. A teaspoon of oil can help prevent sticking.
  • Pour about a quarter of the batter into the skillet, spreading it out to form a round shape. Cook for 2-3 minutes until the edges start to lift and the bottom is golden brown.
  • Gently flip the flatbread and cook for another 2 minutes on the other side. Repeat with the remaining batter.
