  • 1 cup all-purpose flour (or whole wheat) Use whole wheat for a healthier option
  • 1/2 cup rolled oats Adds fiber and texture
  • 1/3 cup honey or maple syrup For natural sweetness
  • 2 large eggs Helps bind the ingredients
  • 1 tsp baking powder For that perfect rise
  • 1/2 tsp baking soda Balances acidity
  • 1/2 tsp salt
  • 1/2 cup milk (or a dairy-free alternative)

Optional Add-Ins

  • blueberries For a fruity twist
  • nuts For added crunch
  • chocolate chips For a sweet touch
  • spinach For a savory version

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the cottage cheese, honey (or maple syrup), eggs, and milk. Stir until well mixed.
  • In another bowl, whisk together the flour, oats, baking powder, baking soda, and salt.
  • Gradually fold the dry ingredients into the wet mixture, being careful not to overmix.
  • If using, gently fold in the optional ingredients like blueberries or nuts.
  • Line a muffin tin with paper liners or grease it, then pour the mixture into each cup, filling them about 2/3 full.

Baking

  • Bake in the preheated oven for about 20-25 minutes, or until golden brown and a toothpick comes out clean.
  • Let the muffins cool in the tin for a few minutes, then transfer to a wire rack to cool completely or enjoy warm.

Notes

Try adding cinnamon, vanilla extract, or lemon zest for additional flavor. Store in an airtight container for freshness—up to 2 days at room temperature or 1 week in the refrigerator.
