  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 cup cooked ground beef or turkey (omit for vegetarian) Optional
  • 1 piece bell pepper, diced
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 piece avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • to taste salt and pepper

Preparation

  • Gather all the fresh ingredients for seamless preparation.
  • In a large mixing bowl, combine the black beans, kidney beans, cooked ground meat (if using), corn, bell pepper, cherry tomatoes, and red onion. Gently toss to blend.
  • Drizzle lime juice over the salad mix and season with salt and pepper.
  • Fold in the diced avocado and cilantro, being careful not to mash them.
  • Serve immediately, or refrigerate briefly to let flavors meld.

Notes

Experiment with spices like cumin or chili powder for additional flavor. Keep it fresh by using seasonal ingredients.
