Ingredients
  

Pasta and Sauce Components

  • 1 pint Cherry Tomatoes, halved Adds sweetness to the dish.
  • 4 cups Fresh Spinach, washed and chopped Packed with nutrients.
  • 1 cup Heavy Cream For luxurious creaminess.
  • ½ cup Parmesan Cheese, freshly grated Melt for flavor.

  • 2 tablespoons Olive Oil For cooking.

Pasta

  • 8 ounces Pasta of choice (such as fettuccine or penne) Any type works well.

Instructions
 

Cooking Pasta

  • In a large pot, bring salted water to a boil. Add your pasta and cook according to package instructions until al dente.
  • Reserve about 1 cup of the pasta water and then drain the rest.

Sautéing Ingredients

  • In a large skillet over medium heat, add olive oil. Once warm, toss in the minced garlic. Sauté for about 1 minute, or until fragrant.
  • Introduce the halved cherry tomatoes into the skillet. Cook until they soften and begin to burst, around 3-4 minutes.
  • Add the chopped spinach to the skillet. Stir until it wilts down, which should take another 2-3 minutes.
  • Pour in the heavy cream, stirring well. Allow it to simmer gently for 2-3 minutes until it thickens slightly.

Combining and Serving

  • Add your drained pasta to the skillet, tossing to coat evenly with the creamy spinach-tomato mixture.
  • Stir in the grated Parmesan cheese until melted and smooth.
  • Finish with salt and pepper to taste. Optionally, add a pinch of red pepper flakes for heat. Serve immediately.

Notes

Use fresh ingredients for the best flavor. Leftovers taste even better the next day.
