Ingredients

For the Chicken

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup buttermilk for marinating
  • 2 tablespoons fresh dill, finely chopped or 1 tablespoon dried dill
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

For the Coating

  • 1 cup all-purpose flour
  • 1/2 cup breadcrumbs (panko works best for extra crunch)
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional for heat)

For Assembling

  • 4 pieces hamburger buns, toasted
  • Lettuce leaves
  • Sliced tomatoes
  • Dill pickles
  • Your preferred condiments (such as mayo or aioli)

Instructions

Marinate the Chicken

  • In a bowl, mix the buttermilk, chopped dill, garlic powder, salt, and pepper.
  • Add chicken breasts, ensuring they’re fully submerged.
  • Cover and refrigerate for at least 2 hours or overnight for maximum flavor.

Prepare the Coating

  • In a shallow dish, combine flour, breadcrumbs, paprika, and cayenne pepper.
  • Mix well to combine.

Coat the Chicken

  • Remove marinated chicken from the buttermilk, allowing excess liquid to drip off.
  • Dredge each piece in the flour mixture, pressing lightly to adhere the coating.

Fry the Chicken

  • Heat oil in a large skillet over medium-high heat until shimmering.
  • Carefully add the chicken, cooking for about 5-7 minutes per side, or until golden brown and cooked through.
  • Use a meat thermometer; the internal temperature should reach 165°F (75°C).
  • Once cooked, transfer to a paper towel-lined plate to drain excess oil.

Assemble the Sandwich

  • Spread your choice of condiment on the toasted buns.
  • Place a crispy chicken breast on the bottom half, and top with lettuce, sliced tomatoes, and pickles.
  • Place the top bun on, and enjoy your delicious creation!

Notes

For Extra Crispiness: Consider double-dipping the chicken in the buttermilk and then the flour mixture for an even thicker crust. Let it rest after frying to retain moisture. Use fresh ingredients for better flavor.
