Ingredients
  

Fish and Breading

  • 4 pieces Firm white fish fillets (cod, haddock, or tilapia) Choose based on availability and preference.
  • 1 cup All-purpose flour For dredging the fish.
  • 2 large Eggs Beaten for the egg wash.
  • 1 cup Cornmeal For coating the fish.
  • To taste Salt and pepper For seasoning the fish.

Buns and Toppings

  • 4 pieces Burger buns (brioche or whole-grain) Soft but sturdy.
  • 1 cup Crisp lettuce For layering.
  • 1 medium Tomato (sliced) For layering.
  • To taste Pickles Optional, to top off the sandwich.

Sauces

  • 1 cup Tartar sauce, remoulade, or spicy mayo Choose your favorite sauce.

Instructions
 

Preparation

  • Preheat your oil in a deep fryer or a large, heavy skillet until hot.

Prepare the Fish

  • Pat the fish fillets dry with paper towels and season with salt and pepper.
  • Set up three bowls: one with seasoned flour, one with beaten eggs, and the last with cornmeal.

Coat the Fish

  • Dredge each piece of fish in the flour, shaking off the excess.
  • Dip it into the egg, then coat with cornmeal, pressing gently to adhere.

Fry the Fish

  • Carefully lower the fish into the hot oil, cooking until golden brown (3-4 minutes per side).
  • Transfer to a paper towel-lined plate to drain excess oil.

Assemble the Sandwich

  • Toast the burger buns lightly.
  • Spread your choice of sauce on the buns, add lettuce and sliced tomatoes.
  • Place the crispy fish on top, add pickles if desired, and top with the other half of the bun.

Notes

Keep the oil hot to avoid soggy fish. Fry in batches to maintain oil temperature, and let fish rest briefly before serving!
