  • 3 –4 medium potatoes Yukon gold or russet, diced
  • 2 poblano peppers
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • For Assembly:
  • 8 –10 tortillas corn or flour
  • 1 cup shredded lettuce or cabbage
  • 1 avocado or guacamole
  • Lime wedges
  • Optional Toppings:
  • Sour cream or crema
  • Cheese or vegan cheese
  • Salsa or hot sauce

Instructions
 

  • Roast poblano peppers until charred, then peel, remove seeds, and slice.
  • Heat oil in a pan and cook diced potatoes until golden and tender.
  • Add garlic, spices, and sliced poblanos. Cook until slightly crispy and well combined.
  • Warm tortillas in a pan or over flame.
  • Fill tortillas with the potato and poblano mixture.
  • Add toppings like lettuce, avocado, and sauce.
  • Squeeze lime juice over tacos and serve.
