Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the sweet potatoes, if desired. Cut each sweet potato into halves or thirds to reduce boiling time.

Boiling

  • Place the sweet potato pieces in a pot and cover with water.
  • Bring to a boil and cook until fork-tender, about 15-20 minutes.
  • Drain the sweet potatoes and let them cool for a few minutes.

Smashed and Roasting

  • Place the sweet potato pieces on a lined baking sheet.
  • Use a fork or a potato masher to gently smash each piece to about ½ inch thick.
  • Drizzle olive oil over the smashed sweet potatoes and season with salt, pepper, and your choice of optional seasonings.
  • Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy.

Serving

  • Remove from the oven and serve hot as a side dish, garnished with fresh herbs if desired.
