  • 2 lbs Chicken Breasts Tender and lean, absorbs the sauce well.
  • 12 oz Pasta Use penne or rotini.
  • 8 oz Cream Cheese Alternatively, use heavy cream.

Seasonings

  • 2 tbsp Cajun Seasoning Adjust to taste for spiciness.
  • 1 tbsp Garlic Minced.
  • 1 medium Onion Diced.
  • to taste Salt and Pepper Essential for flavor enhancement.

Optional Add-Ins

  • 1 cup Bell Peppers Diced, add color and sweetness.
  • 2 cups Spinach or Kale For added nutrition.
  • 1/2 cup Parmesan Cheese For extra creaminess and flavor.

Instructions
 

Preparation

  • Season chicken breasts with Cajun seasoning, salt, and pepper. Optionally, sear in a pan for extra flavor.
  • Place seasoned chicken at the bottom of the Crock Pot. Add diced tomatoes, cream cheese (or heavy cream), onions, and garlic.

Cooking

  • Cover and cook on low for 6-7 hours or high for 3-4 hours.
  • About 20-30 minutes before serving, cook pasta according to package instructions and drain.
  • Once cooked, shred the chicken and stir back into the sauce.
  • Add cooked pasta to the Crock Pot and mix well to coat.

Serving

  • Garnish with chopped parsley or cilantro before serving.

Notes

Store leftovers in an airtight container for 3-4 days. Freeze portions for up to 3 months. Reheat gently to maintain creaminess.
