Ingredients
  

  • 2 lbs boneless skinless chicken breasts or thighs
  • ½ cup yellow or Dijon mustard
  • cup honey
  • 3 cloves garlic minced
  • ¼ cup chicken broth
  • 1 tablespoon olive oil or melted butter
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika or dried thyme optional

Instructions
 

  • Lightly grease the slow cooker.
  • Season chicken on both sides with salt and black pepper.
  • Place chicken in the bottom of the crock pot in a single layer.
  • In a bowl, whisk together mustard, honey, garlic, chicken broth, olive oil, and optional seasoning.
  • Pour sauce evenly over the chicken.
  • Cover and cook:
  • LOW: 4–5 hours
  • HIGH: 2–3 hours
  • Spoon sauce over the chicken halfway through cooking if possible.
  • Chicken is done when it reaches 165°F (74°C) and is fork-tender.
  • Rest 5 minutes before serving. Spoon extra sauce over the top.

Notes

  • Chicken thighs stay juicier if cooking longer.
  • Avoid too much honey—it should complement, not overpower, the mustard.
  • For thicker sauce, uncover and cook an extra 15–20 minutes on HIGH.
