  • 2 pieces English cucumbers (Hot House) a bit larger than 1¾-inch diameter
  • 8 ounces cream cheese softened
  • 4 tablespoons unsalted butter softened
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 bunch fresh dill about 1 ounce
  • Salt to taste
  • Cayenne pepper to taste
  • 9 slices whole grain or white sandwich bread

Preparation

  • Wash the cucumbers thoroughly and slice them into thin, even rounds, aiming for about ¼ inch thick.
  • In a mixing bowl, combine the softened cream cheese and butter, mixing well until fully blended.
  • Add in the Dijon mustard, lemon juice, and finely chopped fresh dill. Season with a pinch of salt and a dash of cayenne pepper. Blend until smooth.

Assembly

  • Remove the crusts from the slices of bread for a soft base.
  • Use a round cookie cutter or a glass to cut out circular bases from the bread.
  • Spread a generous layer of the creamy mixture onto each round.
  • Top each spread with a slice of cucumber.

Final Garnish

  • Place a small sprig of fresh dill on each canapé for presentation.

Notes

Serve the canapés shortly after assembling to maintain crunch. Storing leftovers in an airtight container in the refrigerator is possible but not recommended for best flavor.
