Preparation Steps

  • Wash cucumbers and tomatoes. Dice them into bite-sized pieces and add to a large bowl.
  • Cut avocado in half, remove the pit, scoop out the flesh, and dice. Add to the bowl.
  • Chop cilantro and mix it into the bowl.
  • In a small bowl, whisk together lemon juice and olive oil. Season with salt and pepper before drizzling over the salad.
  • Gently toss all ingredients together and serve immediately.

Notes

For an extra refreshing kick, chill the salad in the fridge for about 30 minutes before serving. Avoid overmixing to prevent bruising the avocado.
