Ingredients
  

For the crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted Ensure it's fully melted

For the cheesecake filling

  • 4 packages (8 ounces each) cream cheese, softened Bring to room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs Add one at a time
  • 1 cup dulce de leche Reserve a couple of tablespoons for drizzling

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until fully combined and press into the bottom of a greased 9×13 inch baking dish.
  • In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth.
  • Gradually add the eggs one at a time, mixing on low speed until just combined.
  • Fold in the dulce de leche gently.

Baking

  • Pour the cheesecake filling over the graham cracker crust.
  • Bake in the preheated oven for about 45-50 minutes, until the edges are set and the center is slightly jiggly.

Cooling

  • Allow to cool at room temperature for about an hour before transferring to the fridge.
  • Let it chill for at least 4 hours, or overnight.

Serving

  • Once chilled, slice into bars and serve with optional warm dulce de leche drizzled on top.

Notes

For best results, use room temperature ingredients. Consider using a water bath for a creamier texture. Allow adequate chilling time for the best flavor.
