Ingredients
  

Salad Base

  • 4 medium medium cucumbers, thinly sliced Use English cucumbers for fewer seeds.
  • 1/2 cup red onion, thinly sliced
  • A handful fresh cilantro or mint, chopped For added freshness.

Dressing

  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar (or honey) For a natural alternative.
  • 1-2 cloves garlic, minced

Optional Garnish

  • To taste sesame seeds or chopped peanuts For garnish.

Preparation

  • Rinse the cucumbers well under cold water. Peel if using regular cucumbers, and thinly slice them about 1/8-inch thick. Place in a large mixing bowl.
  • In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, and minced garlic until the sugar has dissolved.
  • Add sliced red onion to the cucumbers, and pour the dressing over the top. Gently toss everything until well-coated.
  • For best results, let the salad sit in the refrigerator for at least 10 minutes to enhance the flavors.
  • Before serving, sprinkle chopped cilantro or mint and sesame seeds or peanuts on top.

Notes

Choose firm cucumbers for the best texture. Add sliced chilies for heat. Experiment with other ingredients like bell peppers or avocado.
