Ingredients
  

For the Cheesecake Filling

  • 8 ounces Cream Cheese, softened Must be softened for easier mixing.
  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract Enhances the flavor of the filling.

For the Taco Shells and Toppings

  • 4 pieces Flour Tortilla Shells Can be grilled lightly for better texture.
  • 1 cup Fresh Strawberries, sliced Fresh and ripe for best flavor.
  • 1 cup Strawberry Glaze
  • 1/2 cup Graham Cracker Crumbs For sprinkling on top.

Preparation

  • In a medium mixing bowl, beat together the cream cheese and powdered sugar until smooth and fluffy.
  • Add in the vanilla extract and mix until combined.

Cooking Taco Shells

  • Heat a non-stick skillet over medium heat. Place tortilla shells in the pan for about 30 seconds per side until slightly golden.
  • If you wish for them to be crispier, lightly brush with melted butter before heating.

Assembling Tacos

  • Fill each warm tortilla shell with a generous amount of cheesecake mixture.
  • Top the cheesecake filling with sliced fresh strawberries.
  • Drizzle with strawberry glaze and sprinkle graham cracker crumbs on top.

Notes

Chill the cheesecake filling for extra creaminess. Experiment with fruit toppings and serve with ice cream if desired. Store leftovers in an airtight container in the refrigerator, but fill tacos just before serving for optimal texture.
