  • 3 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas) Use fresh, colorful vegetables for added nutrients.
  • 3 cloves garlic, minced Adjust the amount based on your garlic preference.
  • 1 tablespoon ginger, minced Fresh ginger provides the best flavor.
  • 1/4 cup soy sauce Low-sodium soy sauce can be used for a healthier option.
  • 2 tablespoons honey or maple syrup Use maple syrup for a vegan option.
  • 1 tablespoon cornstarch (optional for thickening) Skip if you prefer a thinner sauce.
  • to taste Salt and pepper Season according to your taste.

Preparation

  • Slice the chicken into thin strips, chop the vegetables, and mince the garlic and ginger.

Cooking

  • Place a large wok or skillet over medium-high heat and add the vegetable oil.
  • Add the sliced chicken to the hot oil and sauté for about 5-7 minutes, stirring frequently, until the chicken is cooked through and no longer pink.
  • Once the chicken is fully cooked, toss in your vegetables, garlic, and ginger. Stir-fry for an additional 3-5 minutes, or until the vegetables are just tender but still vibrant and crisp.
  • In a small bowl, whisk together the soy sauce, honey (or maple syrup), and cornstarch if using. Pour the sauce over the stir-fried chicken and vegetables, stirring to coat everything evenly.
  • Allow it to cook for another 2 minutes until heated through and slightly thickened.
  • Remove from heat and serve your easy chicken stir fry over a bed of cooked rice or noodles.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in a skillet or microwave until heated through. Adjust flavors and ingredients based on personal preference.
