Ingredients
  

Main Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 pieces bell peppers (red and green)
  • 1 large onion
  • 2 tablespoons olive oil
  • 1 piece juice of 1 lime
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Preparation

  • Slice the bell peppers and onion into strips.
  • In a small bowl, mix together olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper. Coat the chicken breasts with this mixture.

Cooking

  • Place the seasoned chicken at the bottom of your crockpot, then layer the sliced peppers and onions on top.
  • Cover and set your crockpot on low for 6-8 hours or high for 3-4 hours.
  • Once fully cooked, remove the chicken from the crockpot, shred it using two forks, and return it to the pot. Stir to mix in with the veggies.

Serving

  • Serve your fajitas warm in tortillas or over a bed of rice with your favorite toppings.

Notes

For best results, use fresh ingredients. Experiment with spices for extra heat, and let the dish rest before serving to meld the flavors.
