Ingredients
  

For the Grilled Shrimp

  • 1 pound Shrimp, peeled and deveined
  • 2 tablespoons Olive oil, for grilling
  • To taste Salt and pepper

For the Corn Salsa

  • 1 cup Fresh or cooked corn (grilled or steamed)
  • 1 Ripe avocado, diced
  • 1 small Red onion, finely chopped
  • 1 Lime juice, from 1 lime Fresh is best!
  • A handful Cilantro, chopped (optional)

Optional Ingredients

  • 2 tablespoons Olive oil, for salsa
  • Cooked rice or quinoa For added substance

Preparation

  • In a bowl, toss the shrimp with olive oil, salt, and pepper. Let it marinate for about 10-15 minutes while you prepare the salsa.
  • In a separate bowl, combine the corn, diced avocado, chopped red onion, cilantro, and lime juice. Gently mix together and season with salt and pepper to taste. Set aside.

Grilling

  • Preheat your grill or stovetop grill pan over medium-high heat. Once ready, place the shrimp on the grill and cook for about 2-3 minutes on each side, until they are pink and opaque.

Assembly

  • If you’re using rice or quinoa, start with a base of grains in your bowl. Layer on the grilled shrimp, and top generously with the corn salsa.
  • Add additional lime wedges or cilantro for a fresh touch. Enjoy your vibrant creation!
