Ingredients

Main Ingredients

  • 1 cup shredded carrots
  • 1/2 cup oats
  • 1/2 cup nuts (walnuts or pecans)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup shredded coconut (optional)

Instructions

Preparation

  • Start by shredding the carrots if you haven't already. Measure out all your other ingredients and set them aside.

Mixing

  • In a large bowl, combine the oats, nuts, cinnamon, and nutmeg. Stir until evenly mixed.
  • Add the shredded carrots and honey (or maple syrup) to the dry mixture. Mix well until all ingredients are thoroughly combined. The mixture should be sticky yet hold its shape when pressed.

Forming the Bites

  • With your hands (moistened if necessary to prevent sticking), scoop out tablespoon-sized amounts of the mixture and roll them into balls. Place them on a parchment-lined tray as you go.

Chilling

  • Let the bites chill in the refrigerator for about 30 minutes. This helps them firm up and enhances the flavor!

Serving

  • After chilling, they are ready to enjoy! You can also store them in an airtight container in the fridge for up to a week.

Notes

Customize your nuts and consider adding chocolate chips or dried fruits for extra flavor. If the mixture is too dry, add a splash of water or a little more honey. If it’s too wet, sprinkle in more oats or coconut. These energy bites can serve as a pre-workout snack, lunchbox treat, or healthier dessert alternative.
