  • 2 cups cooked rice or 1 cup uncooked rice
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces

  • 1 small onion diced
  • 1 bell pepper chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon honey optional
  • 2 cloves garlic minced
  • 1 teaspoon ginger fresh or ground
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • Optional: green onions and sesame seeds for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add chicken pieces and cook for 5–7 minutes until lightly browned and cooked through.
  • Add diced onion and bell pepper; cook for 3–4 minutes until softened.
  • Stir in garlic and ginger; cook for 1 minute until fragrant.
  • Add pineapple chunks, soy sauce, honey, and chicken broth.
  • Stir in cooked rice (or uncooked rice with additional broth if needed).
  • Mix well and let simmer for 5–10 minutes until heated through and flavors combine.
  • Taste and adjust seasoning with salt and pepper.
  • Let rest for 5 minutes to absorb flavors.
  • Garnish with green onions and sesame seeds before serving.
