  • 1/2 cup gluten-free oats Choose certified gluten-free oats.
  • 1/2 teaspoon baking soda Ensure freshness for optimal rise.
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup Adjust according to taste.

Fruits

  • 1/2 cup diced fresh apples Sweet varieties like Fuji or Honeycrisp are best.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Lightly oil a mini muffin tin or line it with paper liners.
  • In a mixing bowl, combine almond flour, gluten-free oats, baking soda, ground cinnamon, and salt. Mix thoroughly.
  • Add the applesauce and maple syrup to the dry mixture and stir until combined.
  • Gently fold in the diced fresh apples.
  • Spoon the batter into the prepared muffin tin, filling each cavity about 3/4 full.

Baking

  • Place the muffin tin in the preheated oven and bake for 15-18 minutes or until a toothpick inserted comes out clean.
  • Let them cool in the pan for a few minutes before transferring to a wire rack.

Serving

  • Enjoy warm, or store them for later in an airtight container.

Notes

Store in an airtight container for up to three days at room temperature or freeze for up to a month. Feel free to add nuts or dried fruits for variations.
