Ingredients

For the Fried Chicken

  • 2 pieces chicken breasts (boneless and skinless)
  • 1 cup buttermilk for marinating chicken
  • 1 cup all-purpose flour for coating
  • 1 tsp paprika
  • 1 tsp garlic powder
  • to taste salt and pepper
  • as needed oil for frying

For the French Toast

  • 4 slices bread (thicker slices like brioche or challah) works best for French toast
  • 2 pieces eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • as needed butter for frying

For Serving

  • Maple syrup for drizzling
  • Fresh fruit (like berries or banana) for serving
  • Optional: whipped cream, powdered sugar, or hot sauce additional toppings

Instructions

Preparation

  • In a bowl, pour the buttermilk over the chicken breasts, cover, and let them marinate in the fridge for at least 1 hour, or preferably overnight.
  • In another bowl, mix the flour with paprika, garlic powder, salt, and pepper. Take the marinated chicken out and let any excess buttermilk drip off before dredging in the seasoned flour until fully coated.

Cooking

  • In a large skillet, heat oil over medium heat. Cook the coated chicken breasts for 6-8 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Drain on paper towels.
  • In a shallow dish, whisk together the eggs, milk, vanilla extract, and cinnamon. Heat a small amount of butter in a pan over medium heat.
  • Dip each slice of bread in the egg mixture, coating both sides, and cook until golden brown, about 3-4 minutes per side.

Assembly

  • Place one slice of French toast on a plate, add a piece of fried chicken, drizzle with maple syrup, and top with another slice of French toast.

Serving

  • Serve your sandwich with fresh fruit on the side and any additional toppings you desire.

Notes

Choose thicker slices of bread to avoid sogginess, and consider doubling the dip for extra crunch. If making multiple sandwiches, keep them warm in the oven at a low temperature.
