Ingredients
  

Main Ingredients

  • 2 cans (15 ounce) whole kernel corn, drained
  • 1 piece red bell pepper, finely diced
  • 2 cups shredded Mexican blend cheese
  • 1 cup mayonnaise (can substitute light mayo)
  • 1/4 teaspoon black pepper
  • 1 bag (9.25 ounce) Chili Cheese Fritos, lightly crushed
  • to taste Fresh cilantro, for garnish

Instructions
 

Preparation

  • Drain the corn and chop the red bell pepper.
  • In a large mixing bowl, combine the drained corn, diced red bell pepper, and shredded cheese.

Dressing

  • In a separate bowl, mix the mayonnaise and black pepper together until smooth.
  • Pour the dressing over the corn and vegetable mixture and stir well to coat everything evenly.

Serving

  • Fold in the crushed Chili Cheese Fritos just before serving for a delightful crunch.
  • Top with fresh cilantro before serving.

Notes

Don't overmix the Fritos; add them just before serving to keep their crunch. Chill the salad for at least an hour to meld flavors.
