  • 2 tablespoons butter Melted for making the glaze.

Preparation

  • Rinse your carrots well and peel them. Cut them into sticks about 1-inch wide to ensure they grill nicely.

Make the Glaze

  • In a small saucepan, melt the butter over medium heat. Add in the honey and brown sugar. Stir continuously until the sugar is dissolved and the mixture is smooth. Season with a pinch of salt and pepper.

Preheat the Grill

  • Preheat your grill to medium-high heat.

Coat the Carrots

  • Place the carrot sticks in a large mixing bowl or a ziplock bag. Drizzle with olive oil and toss to coat. Pour half of the honey brown sugar butter glaze over the carrots and mix well.

Grill the Carrots

  • Once the grill is hot, place the carrots directly on the grill grates. Grill them for about 15–20 minutes, turning occasionally, until they are tender and charred.

Finish and Serve

  • In the last 2–3 minutes of cooking, brush the remaining honey brown sugar glaze over the carrots. Remove from the grill and let them rest for a couple of minutes before serving.

Notes

These grilled carrots are great as an accompaniment to grilled meats or tossed into salads. Be careful not to overcook them and ensure preheating the grill for the perfect grill marks.
