Main Ingredients

  • 6 large ears large ears of corn
  • 1/3 cup Kraft Mayo (reduced fat is fine) Can use reduced fat version.
  • 1/2 cup Kraft Sour Cream (reduced fat is fine) Can use reduced fat version.
  • 8 oz cotija or Athenos Feta Cheese Crumble over salad.
  • 2 Juice of 2 limes
  • 1 tsp chili powder Adjust for spice preference.
  • 2 tbsp fresh cilantro, chopped Plus more for garnish.
  • 1 tsp salt

Instructions
 

Preparation

  • Preheat your grill.
  • Husk the corn and place the ears directly on the grill.
  • Grill the corn for about 10-15 minutes, turning occasionally, until charred.

Mixing

  • Remove the corn from the grill and let cool slightly before cutting the kernels off the cob.
  • In a separate bowl, combine mayonnaise, sour cream, lime juice, chili powder, salt, and cilantro. Mix thoroughly.
  • Pour the dressing over the grilled corn and mix gently until coated.
  • Crumble cotija or feta cheese over the top and stir gently.
  • Garnish with more cilantro and serve immediately, or refrigerate until ready.

Notes

Serve chilled for the best taste. Customize with proteins or additional veggies as desired.
