Ingredients
  

  • 1.5 lbs skirt steak
  • 4 –6 pita breads
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon cumin
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup tzatziki sauce
  • 1 cup chopped tomatoes
  • ½ red onion thinly sliced
  • Optional: cucumber lettuce, feta cheese

Instructions
 

  • In a bowl, mix olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper.
  • Rub marinade over the skirt steak and let marinate for at least 30 minutes.
  • Preheat grill to high heat (about 450°F).
  • Grill steak for 3–5 minutes per side until desired doneness.
  • Remove and let rest for 5 minutes.
  • Slice steak thinly against the grain.
  • Warm pita bread.
  • Fill pita with steak, tomatoes, onion, and toppings.
  • Drizzle with tzatziki sauce and serve.

Notes

  • Do not overcook skirt steak to keep it tender.
  • Always slice against the grain for best texture.
  • Marinate longer for deeper flavor.
  • Add extra sauce for more moisture and taste.
