Instructions
 

Preparation

  • Cut the tomatoes in half and remove the seeds to prevent excess moisture.
  • Drizzle the tomatoes with olive oil and sprinkle with salt and pepper.

Grilling

  • Preheat your grill to medium-high heat.
  • Place the tomatoes cut-side down on the grilling surface.
  • Grill for about 5-7 minutes until grill marks appear and the tomatoes soften.

Preparing the Ricotta

  • Mix ricotta cheese with chopped fresh herbs and a little salt and pepper for extra flavor.

Assembly

  • Once the tomatoes are grilled, remove them from heat and allow to cool slightly.
  • Top the grilled tomatoes with the herb-infused ricotta.
  • Drizzle with balsamic glaze before serving.

Toasting Baguette

  • If serving toasted baguette, place slices on the grill for 1-2 minutes until crispy.
