- 1 tablespoon olive oil
- 1 lb ground beef
- 1 medium onion diced
- 3 cloves garlic minced
- 2 tablespoons tomato paste
- 4 cups beef broth
- 3 medium potatoes peeled and diced
- 3 carrots sliced
- 1 tablespoon Worcestershire sauce
- ¾ teaspoon salt adjust to taste
- ½ teaspoon black pepper
- ½ teaspoon paprika or dried thyme optional
Heat olive oil in a large pot or Dutch oven over medium heat.
Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
Add onion and cook 3–4 minutes, until softened.
Stir in garlic and cook 30 seconds, until fragrant.
Add tomato paste and stir until the beef is well coated.
Pour in beef broth.
Add potatoes, carrots, Worcestershire sauce, salt, pepper, and optional seasoning.
Bring to a gentle boil, then reduce heat to low.
Cover and simmer 30–35 minutes, stirring occasionally, until potatoes are fork-tender.
Remove from heat and rest 5 minutes. Taste and adjust seasoning before serving.
