This Hamburger Stew is hearty, comforting, and made with simple pantry ingredients. Tender potatoes, carrots, and savory ground beef simmer together in a rich broth for an easy one-pot dinner that’s budget-friendly, filling, and even better the next day.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 3 medium potatoes peeled and diced
  • 3 carrots sliced
  • 1 tablespoon Worcestershire sauce
  • ¾ teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • ½ teaspoon paprika or dried thyme optional

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
  • Add onion and cook 3–4 minutes, until softened.
  • Stir in garlic and cook 30 seconds, until fragrant.
  • Add tomato paste and stir until the beef is well coated.
  • Pour in beef broth.
  • Add potatoes, carrots, Worcestershire sauce, salt, pepper, and optional seasoning.
  • Bring to a gentle boil, then reduce heat to low.
  • Cover and simmer 30–35 minutes, stirring occasionally, until potatoes are fork-tender.
  • Remove from heat and rest 5 minutes. Taste and adjust seasoning before serving.

Notes

  • Browning the beef well adds depth of flavor.
  • Cut vegetables evenly so they cook at the same rate.
  • Stew thickens as it rests—add broth when reheating if needed.
