Preparation

  • Preheat your oven to 425°F (220°C).
  • Slice the zucchinis into ½-inch thick rounds.
  • In one bowl, whisk the egg until well-mixed.
  • In another bowl, combine the breadcrumbs, Parmesan (if using), garlic powder, Italian seasoning, salt, and pepper.

Breading

  • Dip each zucchini round into the egg mix, letting the excess drip off.
  • Press each round into the breadcrumb mixture, ensuring an even coating.
  • Place the coated zucchini rounds on a baking sheet lined with parchment paper.
  • Lightly spray the tops with olive oil.

Baking

  • Bake for about 20-25 minutes, flipping halfway through, until golden and crispy.

Serving

  • Let them cool for a minute before serving. Pair with your favorite dipping sauce like marinara or ranch.

Notes
