For the lemon dressing

Instructions
 

Preparation

  • If you haven't cooked your chicken yet, season it with salt, pepper, and a drizzle of olive oil. Grill it on medium heat until fully cooked, usually about 6-8 minutes per side. Allow it to rest, then slice or shred.

Make the Dressing

  • In a bowl or jar, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper. Adjust according to your taste.

Assemble the Salad

  • In a large mixing bowl, combine the chopped kale with the sliced chicken, cherry tomatoes, cucumber, red onion, and avocado.

Add the Dressing

  • Pour the lemon dressing over the salad. Toss gently to ensure everything is well coated.
